One of the oldest tricks in the book, blind baking involves the technique of cooking your pastry shell prior to administering the filling, in order to achieve well-cooked pastry (you know the crunchy but soft kind!).  Blind baking is used when making pies or quiche . Of course, we would always advise buying store-pastry if you don't have a chance to make your own, but if you do (for instance, puff pastry), go for it!
