This caper fan believes capers packed in salt are the superior caper; apparently you can rinse them off, pat them dry, then smash them onto your oil-drizzled fresh bread!  The salt packed caper creates a fresher flavour as there is less acidity than brined in vinegar; use them as you would a preserved caper - in a salad, fried with fish or as a substitute for the salty seasoning function of the olive.
