Chinkiang is dark brown Chinese rice vinegar, used throughout Asian cooking. As a hard-to-find, we think of it as one of our speciality vinegars but it is actually considered an essential ingredient in Chinese cooking.This is also known as Chinese Brown Rice Vinegar, Black Vinegar, Chin Kiang.
