Watch as Sumac brings its force, with Baharat, to this homemade falafel recipe.  Or see it rocking a roast chook in this Gourmet Traveller recipe. Sumac is also a favourite of La Nigella.  She makes a great middle eastern bread salad called Fattoush in her bestseller Forever Summer.  Firstly peel apart two pita bread and crisp up in a 220 degree oven for 5 minutes. Leave them to cool and then tear into smallish pieces. Then just mix 3 chopped spring onions, 1 peeled and quartered cucumber, 3 diced tomatoes, big handfuls of chopped fresh parsley and mint, and 1 minced garlic clove. Toss together with the pita pieces and a dressing made from olive oil and the juice of half a lemon.  Sprinkle rich, red sumac over the top for colour and extra taste.
